Kuska II

Kuska is an interesting vegetarian dish. Kuska is prepared with  biryani masala made from scratch. The flavour profile of this dish is new so try it out and let me know.....


Serving for 2

Ingredients


Basmathi rice  --1 1/2 cups
Onion( chopped)--1 cup( 1 small size onion)
Tomato -- 2 nos
Garlic -- 8 nos      
Ginger -- 1 inch
Greenchili --7nos
Mint chopped -- Handful
Corrinder leaves -- Handful
Bay leaf   --1 no
Cinnamon -- 1 stick
Cloves --  2 nos
Cardamon --2 nos
Fennel seeds -- 2 tsp
Star anise --3 nos
Turmeric --1tsp
Corrinder powder -- 1 tsp
Jeera powder -- 1tsp
Pepercorns -- 1 tsp
Oil   --  3 tsp
Salt  --  1 tsp

To Grind
Paste1
Ginger
Garlic
Mint
Corrinder leaves

Paste 2
Jeera powder
Corrinder powder
Turmeric 
Cinnamon
Cardamom
Cloves
Fennel
Star anise
Peppercorns

First grind the dry ingredients then combine with rest

Method
  • Soak the rice for 10 min and  fry them with a tsp of ghee .
  • Add oil in  a pan, when hot add fennel seeds.
  • Add Onions ,tomatoes  and grounded paste 1 stir until raw smell disappear.
  • Cook until tomatoes are smashed.
  • Add grounded powder (paste 2) allow to boil.
  • Add basathi rice and pressure cook for flavorful recipe.( rice water ratio 1 : 11/2)
  • Serve hot with Raita.

  1. WOW! Interesting! Ok - tell me which language Kuska is? The recipe looks sounds like a biryani recipe ...but the dish looks like puliodarai...

  2. Kuska is a plain biriyani. The color is greenish brown because of ground mint and corrinder leaves.
