Chidambaram kusthu/ Dry Brinjal Kosthu

Chidambaram  Kosthu  is my grandma's Recipe i got this wonderful recipe from her. I love this recipe as we can  taste   the  authentic Indian flavour.

Ingredients


Tamarind -- 1 small lemon size piece
Brinjal  -- 3 nos
Small onion  -- 8 nos
Chana dal -- 1 tsp
Kosthu podi -- 2tsp
Red chili  --  3 nos
Red chili powder -- 1 tsp
Curry leaves  -- few
Corrinder leaves-- few
Mustard  -- 1 tsp
Jeera -- 1 tsp
Oil
Salt


Method
  •  In a hot pan add oil along with mustard, jeera, dal, curry leaves ,and red chili.
  • Add the tamarind juice with salt and chili powder.
  • Cut the  brinjal into small pices fry them until translucent and  smash them seperatly and add to the gravy.
  • Boil then until gravy thickens .
  • Add the kosthu podi.( add last to retail its flavour)
  • Add corrinder leaves and serve hot with dosa or idly.

Ingredients

Red chili                             5 nos
Corrinderseeds/ Dhania    5 tsp
Channadal                          3 tsp
Asefotidila
        
To dry roast and grind

Red chili
Dhania
Chana dal

Method
  • Roast the ingredients one by one  until its fllavour comes out. 
  • Dhania when roasted splits for indication.
  • Dal should  get brown.
  • When roasting  red chili add salt to avoid its pungent flavor.
  • U can store this mixture for months
