Tomato Fried Rice

Tomato dishes always taste good so i tried to make fried rice with using tomatoes and masala. It gives a slight masala flavour with a taste of basmathi rice.


Serving for 2

Ingredients

Tomatoes -- 2 nos( Chopped to small pieces)
Basmathi rice  --1 1/2 cups
 Coconut milk -- 1cup
Onion( chopped)--1 cup( 1 small size onion)
Carrot sliced --1 no  
Peas -- 1/4 cup           
Ginger -- 1 inch
Garlic--6 nos
Greenchili --3 nos
Red chili -- 3 nos
Bay leaf   --1 no
Cinnamon -- 1 stick
Cloves --  2 nos
Corrinder leaves      few
Oil   --  3 tsp
Salt  --  1 tsp

To Grind
Ginger
Garlic
Red chili
Green chili


Method
  • Soak the rice for 10 min and cook with water 2 cup and  coconut milk 1 cup.
  • Add oil in  a pan, when hot add cloves,cinnamon f and bay leaves.
  • Add Onions tomatoes ,and grounded paste stir until raw smell disappear.
  • Add veg   and saute for few min.
  • Add  cooked basmathi rice  and mix well  and cook in  simmer  for few min until flavor blends.
  • Serve hot with Raita.
